Chilled Avocado Soup
I wanted to create a soup with avocados because of their nutritional value – if eaten frequently, avocados will lower your LDL or "bad cholesterol" levels and raise your HDL or "good cholesterol" levels. People often think that avocados are very caloric, but a serving of avocado has the same number of calories as a serving of other popular fruits like cantaloupe, honeydew melon, and pineapple. I like to serve this soup at the start of a dinner party in demitasse cups – it is an elegant and refreshing first course.

Ingredients
2 ripe avocados
2 limes, juiced
1 cup heavy cream (may substitute: half & half, fat-free half & half, or milk)
1 cup cold water (may substitute: chicken or vegetable stock)
1 teaspoon ground cumin
1 dash Tabasco
1 dash Worcestershire sauce
Salt and fresh ground black pepper to taste
Garnish
1 plum tomato, seeds removed, small dice
1 teaspoon avocado oil such as Avocado Oil by La Tourangelle or Olivado Extra Virgin Avocado Oil from igourmet.com (item #3319 & item #014)
Methode
Cut both avocados in half and remove the pit. With a large spoon, scoop out the avocado and place in a blender.
Add all the ingredients and purée the mixture until smooth. If it is too thick, adjust the consistency with cold water, chicken or vegetable stock.
Refrigerate one hour before serving.
Garnish with diced tomatoes and avocado oil just before serving.
